Besides the wonderful healing properties of fresh herbs you can have the best of both worlds by enhancing your favorite dishes whilst eating your way to good health.
You probably use some of the very basic herbs already such as basil,thyme but there is such a great range that really is worth your time experimenting.

It would be great to hear of some of your favorite reipes so please do take the time to reply to this thread with you favorite recipes enhanced with herbs.

Chervil Soup

One of my favorites and very quick and easy to make.

Chervil Soup...alter the quantities to suit

Serves One.

2 tbsp Butter
2 tbsp flour
3 tbsp chopped chervil
1 pints vegetable stock
Salt to season
1 tbsp single cream

1. Melt butter in pan and very gently cook the chervil for a few minutes

2. Add the flour stirring constantly and add a little of the stock to make it smooth

3. Pour in the the remaining stock and add some salt and pepper to your tast

4. Simmer for about 20 mins... go tend the garden whilst your waiting

5. Liquidise quickly and serve it with the cream swirled in.

Absolutely lovely with a crusty piece of bread and best butter

Nettle Soup

I found this great little recipe for nettle soup so it was on with the gardening gloves and secateurs in hand on my doggy walk the other other day. Nettles by the tons grow on the meadows near us. I tried the recipe which is incredibly quick and easy to do....and it was really rather nice. I think I could have added a few more nettles maybe to get some added health benefits though.

Here's the recipe and website where I found the recipe

Ingredients:

1 lb potatoes
½ lb young nettles
2 oz butter
1½ pts chicken or vegetable stock
sea salt & black pepper
4 tablespoons sour cream

Method:

Cook the peeled, chopped potatoes for 10 mins in salted water. Drain.

Wash & chop coarsely the nettles (Only pick the new, young tops,using gloves!)

Melt the butter in a saucepan, add the nettles and stew gently for a few minutes. Add the potatoes and heated stock, bring to the boil and simmer for 10 minutes or until tender.

When all is soft, cool slightly & purée in a blender, adding seasoning and the sour cream.



Yum yum... I think nettle wine might be in order of the day too... now where to buy those demi johns hmmm....
